Greek Garbanzo Bean Salad

This has become our favorite summer salad! Given our nomadic lifestyle, aiming to live on the cusp of summer, it frequents our table. All of the ingredients, except for the beans, we buy fresh for a crisp crunch and bright flavor.

I have decided to post this here in case the owner of the app where we found it discovers that this recipe does not need the tool that the app supports. Thank you to Urvashi Pitre for writing a procedure that meets the app’s requirements.

If served as part of a larger meal this salad could easily feed four to six people. With a few slices of garlic naan or pita, we typically finish it in one sitting and are well fed for the rest of the day. The variety of vegetables and Feta Cheese provide a full complement of proteins.

This one bowl meal may be made in advance or eaten immediately. We have packed this salad with two forks, napkins, and an ice pack and carried it for eating on a hike or at a rest area while traveling.

I adapted this recipe to list the weights of the various vegetables since grocers typically have a scale.

Tools

With a fork, sharp knife, cutting board, peeler, and a 2 quart seal-able bowl this recipe comes together in a few minutes.

Procedure

Whisk together in a large seal-able bowl the dressing comprised of the following:

  • ½ teaspoon of freshly ground Pepper
  • 1 teaspoon of Italian Herbs
  • 1½ teaspoon of salt
  • 1 Tablespoon of White Vinegar / Balsamic Vinegar
  • 3 Tablespoons of Extra Virgin Olive Oil

Chop and add the following vegetables to the same bowl:

  • 1 cup of Cherry/Grape Tomatoes cut lengthwise
  • 10 ounces of peeled and diced Cucumber
  • 1 Green Bell Pepper, deseeded and chopped into bite sized pieces
  • 1/2 Red Onion (5 ounces), chopped
  • 16 Kalamata Olives (2 ounces), sliced lengthwise
  • 4 ounces crumbled Feta Cheese
  • 15 ounce can of Garbanzo Beans/Chickpeas, drained and rinsed
  • 1 ounce of chopped fresh Parsley

Gently fold everything together, seal the container, and refrigerate.

Before serving, gently invert the container to allow any dressing that may have settled to remix with the vegetables.
